The cuisine of Ladin valleys refers to the Tyrolean tradition, for instance speck “canederli”, i.e. bread dumplings with local smoked ham, or “strudel”. The mountaineers used to eat dairies, cereals, and broad beans. Barley was the most common cereal. Bread was baked twice in a year in the common oven right in the middle of “les viles”. Butter was the only one condiment. Many dishes are prepared following the old manner, such as PANICIA, BARLEY SOUP, TURTRES, CAJINCÌ, and APPLE FRITTERS.
